- 1 cup quinoa (rinsed)
- 1 cup bell peppers (finely chopped)

- 1 cup whole wheat breadcrumbs
- 2 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil (for sautéing and cooking)
- 4 whole grain or gluten-free burger buns
Instructions
- Prepare quinoa by rinsing it under cold water. Combine with 2 cups of water in a saucepan, bring to a boil, then reduce heat to low and simmer for about 15 minutes until water is absorbed. Let sit covered for an additional 5 minutes.
- In a skillet over medium heat, add 1 tbsp olive oil. Sauté the onion until translucent (about 5 minutes), then add chopped bell peppers and minced garlic; cook for another 3 minutes until softened.
- In a large bowl, mix cooked quinoa, sautéed vegetables, mashed black beans, breadcrumbs, cumin, and smoked paprika until well combined.
- Form the mixture into patties—aim for four large or six smaller patties.
- Heat another tablespoon of olive oil in the skillet over medium heat and cook each patty for about 4–5 minutes on each side until golden brown.
