  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 to 4 tablespoons cold water
  • 6 oz dark chocolate (minimum 60% cocoa), chopped
  • 1/2 cup heavy cream
  • 1 cup fresh raspberries

Instructions

  1. 1. Preheat oven to 350°F (175°C). In a bowl, mix flour, cocoa powder, sugar, and salt. Add cold butter and combine until crumbly. Stir in egg yolk and enough cold water to form dough. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.
  2. 2. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Place in a tart pan, trim excess dough.
  3. 3. Cover with parchment paper, fill with pie weights or dried beans, and bake for 15 minutes. Cool slightly before removing weights.
  4. 4. For ganache, heat heavy cream until steaming but not boiling. Remove from heat; add chopped dark chocolate and stir until smooth.
  5. 5. Pour ganache into cooled tart shells and let set at room temperature for about an hour or refrigerate for quicker setting.
  6. 6. Top with fresh raspberries before serving.
