- 6 oz dark chocolate (minimum 60% cocoa), chopped
- 1/2 cup heavy cream
- 1 cup fresh raspberries
Instructions
- 1. Preheat oven to 350°F (175°C). In a bowl, mix flour, cocoa powder, sugar, and salt. Add cold butter and combine until crumbly. Stir in egg yolk and enough cold water to form dough. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.
- 2. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Place in a tart pan, trim excess dough.
- 3. Cover with parchment paper, fill with pie weights or dried beans, and bake for 15 minutes. Cool slightly before removing weights.
- 4. For ganache, heat heavy cream until steaming but not boiling. Remove from heat; add chopped dark chocolate and stir until smooth.
- 5. Pour ganache into cooled tart shells and let set at room temperature for about an hour or refrigerate for quicker setting.
- 6. Top with fresh raspberries before serving.
