  • 2 lbs beef chuck roast
  • 2 tbsp birria spice mix
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup pineapple juice
  • 8 slices sourdough bread
  • 2 cups Mexican cheese blend (Oaxaca and Chihuahua)
  • 4 tbsp unsalted butter

Instructions

  1. Trim excess fat from the beef chuck roast and season with salt and pepper. Sear in a large pot over medium-high heat until browned on all sides.
  2. Add chopped onions and minced garlic to the pot; sauté until softened. Stir in the birria spice mix and pineapple juice.
  3. Cover the beef with water, bring to a boil, then reduce heat to low. Simmer for 2-3 hours until fork-tender.
  4. Shred the beef into bite-sized pieces and return it to the pot.
  5. Butter one side of each slice of sourdough bread. On the unbuttered side, layer shredded beef and Mexican cheese blend; top with another slice of bread.
  6. Grill sandwiches in a skillet over medium heat until golden brown on both sides and cheese is melted.
