- 2 medium potatoes (about 400g), peeled and cubed
- 1 small cauliflower (about 300g), cut into florets
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tsp ground turmeric
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp garam masala
- 2 green chilies, chopped (adjust to taste)
- 3 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Prepare the vegetables by washing and peeling the potatoes, then cutting them into bite-sized pieces. Cut the cauliflower into small florets.
- In a large skillet over medium heat, warm the vegetable oil. Add chopped onions and sauté until golden brown (about 5 minutes).
- Stir in minced garlic and grated ginger along with cumin seeds, cooking for another minute until fragrant. Then add turmeric, coriander, and green chilies.
- First add the potato pieces; mix well for about two minutes before adding cauliflower florets.
- Pour in just enough water to cover the vegetables partially. Cover and simmer on low heat for about 20-25 minutes or until tender.
- Once cooked through, sprinkle garam masala on top along with freshly chopped cilantro. Serve hot with rice or flatbread.
