Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1/4 cup milk
  • 1 large egg
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • salt and black pepper to taste
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking sheet with olive oil.
  2. Combine chicken, breadcrumbs, parmesan, milk, egg, garlic, parsley, oregano, salt, and pepper in a bowl.
  3. Shape into 1.5-inch meatballs and place on the sheet.
  4. Bake 18–20 minutes, turning halfway, until golden and internal temp 165°F.
  5. Let rest a few minutes, then serve or store.
