Ingredients

  • 2 cups butternut squash, cubed
  • 4 cups kale, torn into bite-sized pieces
  • 1/3 cup Caesar dressing (homemade or store-bought)
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 cup croûtons (store-bought or homemade)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). On a baking sheet, toss the butternut squash cubes with olive oil, salt, and pepper.
  2. Roast the squash for 25-30 minutes until tender and caramelized, stirring halfway through.
  3. While roasting, wash and dry the kale. Remove tough stems and tear leaves into smaller pieces.
  4. In a large bowl, combine roasted squash with kale. Add Caesar dressing and toss gently until well mixed.
  5. Top with grated Parmesan cheese and croûtons before serving.
