Instructions
- Preheat your oven to 400°F (200°C). On a baking sheet, toss the butternut squash cubes with olive oil, salt, and pepper.
- Roast the squash for 25-30 minutes until tender and caramelized, stirring halfway through.
- While roasting, wash and dry the kale. Remove tough stems and tear leaves into smaller pieces.
