Ingredients

  • 2 cups butternut squash, peeled and cubed (about 1 medium squash)
  • 4 cups kale, stems removed and chopped
  • 1/3 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the butternut squash cubes with olive oil, salt, and pepper, then spread them evenly on the baking sheet.
  3. Roast the squash for about 25-30 minutes, stirring halfway through until tender and caramelized.
  4. While the squash roasts, massage the chopped kale with olive oil until softened.
  5. In a large bowl, combine the roasted butternut squash with massaged kale and add Caesar dressing to taste; toss well.
