- 6 large flour tortillas
- 1 lb lean ground beef
- 1 cup pepperoni slices
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 cup marinara sauce
Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a skillet over medium heat, brown the ground beef and drain excess fat. Stir in half of the marinara sauce.
- Lay each tortilla flat and fill with the beef mixture, pepperoni, and cheeses. Roll tightly and place seam-side down in the baking dish.
- Pour remaining marinara sauce over the enchiladas and top with extra cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes until golden and bubbly.
