Ingredients

  • 1/2 cup small tapioca pearls
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 cups fresh strawberries (hulled and chopped)
  • 2 cups water

Instructions

  1. Soak the tapioca pearls in water for 30 minutes. Drain and cook in boiling water for 10-15 minutes until translucent. Drain and rinse under cold water.
  2. In another saucepan, heat coconut milk and sugar over low heat until sugar dissolves.
  3. Combine cooked sago with the coconut mixture and let it cool for about 30 minutes.
  4. Fold in half of the chopped strawberries and chill in the refrigerator for at least one hour before serving.
  5. Serve in bowls or glasses topped with remaining strawberries.
