  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar + 2 tsp ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Beat in eggs one at a time and add vanilla.
  3. In another bowl, whisk flour, baking powder, cinnamon, and salt. Gradually mix into the wet ingredients until just combined.
  4. In a separate bowl, beat cream cheese until smooth; mix in powdered sugar and vanilla until creamy.
  5. Scoop dough, flatten slightly, and place about one teaspoon of cheesecake filling in the center. Enclose the filling by folding over the dough.
  6. Roll each ball in the cinnamon-sugar mixture before placing on the baking sheet and slightly flattening.
  7. Bake for 12-15 minutes until edges are golden. Cool on baking sheets for five minutes before transferring to wire racks.
