  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups low-sodium chicken broth
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 4 tbsp unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. In a large pot, heat 1 tbsp of oil over medium heat and sear the chicken for about 5 minutes on each side until golden brown. Remove and set aside.
  2. In the same pot, add onions, carrots, and celery; sauté for about 5 minutes until softened.
  3. Pour in the chicken broth while scraping up any bits from the bottom of the pot. Bring to a gentle simmer and add back the seared chicken. Cover and cook for about 20 minutes until fully cooked.
  4. Remove the chicken, shred it into bite-sized pieces, and return to the pot.
  5. In a bowl, mix flour, baking powder, milk, salt, and melted butter until just combined to make the dumpling batter.
  6. Drop spoonfuls of dough into the simmering broth without lifting the lid; cook for about 15 minutes until fluffy.
  7. Serve hot garnished with parsley if desired.
