- 1 cup long-grain white rice
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- 1. Preheat oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
- 2. In a skillet over medium heat, brown the ground beef and diced onion until cooked through. Drain excess fat.
- 3. In another pot, cook the rice according to package instructions.
- 4. Combine the cooked beef and rice in a large bowl with minced garlic and cream of mushroom soup. Mix well.
- 5. Transfer the mixture to the prepared baking dish and spread evenly.
- 6. Top with shredded cheeses.
- 7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden brown.
