- ⅓ cup granulated sugar
- 2 ripe pears, sliced (Bartlett or Bosc)
- 1 cup fresh or frozen cranberries
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 1 egg (for egg wash)
- 1 tbsp milk (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix flour, sugar, and salt. Add cold butter and mix until crumbly. Gradually add ice water until dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- Toss sliced pears with cranberries, sugar, cinnamon, nutmeg, and lemon juice in another bowl. Let sit while rolling out the dough.
- Roll out chilled dough on a floured surface into a circle about ⅛ inch thick. Transfer to the prepared baking sheet.
- Place the fruit mixture in the center of the dough. Fold edges over filling, creating a rustic look.
- Brush edges with the egg wash (whisked egg + milk). Bake for 35-40 minutes until golden brown.
