  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ⅓ cup granulated sugar
  • 2 ripe pears, sliced (Bartlett or Bosc)
  • 1 cup fresh or frozen cranberries
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, sugar, and salt. Add cold butter and mix until crumbly. Gradually add ice water until dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Toss sliced pears with cranberries, sugar, cinnamon, nutmeg, and lemon juice in another bowl. Let sit while rolling out the dough.
  4. Roll out chilled dough on a floured surface into a circle about ⅛ inch thick. Transfer to the prepared baking sheet.
  5. Place the fruit mixture in the center of the dough. Fold edges over filling, creating a rustic look.
  6. Brush edges with the egg wash (whisked egg + milk). Bake for 35-40 minutes until golden brown.
