  • 4 bone-in short ribs (about 3 lbs)
  • 2 cups fresh apple cider
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • 4 medium carrots, sliced
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season short ribs with salt and pepper. In a Dutch oven, sear ribs on all sides over medium-high heat until browned (about 3-4 minutes per side). Remove and set aside.
  3. Sauté onions and carrots in the same pot until softened (about 5 minutes). Add garlic and sauté for another minute.
  4. Pour in apple cider, scraping up browned bits from the pot. Stir in beef broth, balsamic vinegar, thyme, and rosemary.
  5. Return short ribs to the pot, ensuring they are submerged in liquid. Bring to a gentle simmer.
  6. Cover and transfer to the oven. Braise for about 3 hours or until meat is fork-tender.
