Ingredients
Scale
- 4 bone-in short ribs (about 3 lbs)
- 2 cups fresh apple cider
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 sprigs thyme
- 2 sprigs rosemary
- 4 medium carrots, sliced
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season short ribs with salt and pepper. In a Dutch oven, sear ribs on all sides over medium-high heat until browned (about 3-4 minutes per side). Remove and set aside.
- Sauté onions and carrots in the same pot until softened (about 5 minutes). Add garlic and sauté for another minute.
- Pour in apple cider, scraping up browned bits from the pot. Stir in beef broth, balsamic vinegar, thyme, and rosemary.
- Return short ribs to the pot, ensuring they are submerged in liquid. Bring to a gentle simmer.
- Cover and transfer to the oven. Braise for about 3 hours or until meat is fork-tender.
