  • 4 medium potatoes (Russets or Yukon Gold), diced

  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Trim excess fat from the beef chuck roast and cut into bite-sized cubes. Season with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Sear the beef cubes in batches until browned on all sides (5-7 minutes per batch). Remove and set aside.
  3. In the same pot, reduce heat to medium and sauté chopped onions and minced garlic until softened (3-5 minutes).
  4. Return seared beef to the pot with diced potatoes. Pour in beef broth until everything is submerged. Stir in cumin, paprika, bay leaves, salt, and pepper.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 1.5 to 2 hours until both beef and potatoes are tender.
