Ingredients
- Bone‑in pork chops
- Baby russet potatoes
- Red bell pepper
- Red onion
- Garlic cloves
- Olive oil
- Smoked paprika
- Sea salt
- Black pepper
- Fresh thyme
- Optional lemon wedges
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment.
- Halve potatoes, cut peppers and onions, toss with olive oil, salt, pepper, and half paprika.
- Pat pork chops dry, season with salt, pepper, and remaining paprika, resting for 10 minutes.
- Arrange vegetables on sheet pan, place pork chops on top.
- Sprinkle thyme, rosemary, extra paprika, bake 25‑30 minutes until pork 145°F and potatoes golden.
- Rest five minutes, serve with lemon wedges.
