Ingredients

  • 1 cup basmati rice
  • 1 cup split yellow moong dal
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 inch fresh ginger, grated
  • ½ teaspoon turmeric powder
  • 2 cups mixed vegetables (carrots, peas, potatoes), chopped
  • 4 cups water
  • Salt to taste

Instructions

  1. Rinse basmati rice and moong dal under cold water until clear; soak for 30 minutes.
  2. Chop the vegetables into small pieces while the rice and dal soak.
  3. In a heavy-bottomed pot, heat ghee or oil over medium heat; add cumin seeds and let them sizzle.
  4. Stir in grated ginger and turmeric powder; sauté for one minute.
  5. Drain soaked rice and dal; add to the pot along with chopped vegetables and mix well.
  6. Pour in four cups of water and season with salt; cover and cook on medium heat for 20-25 minutes until tender.
