  • 1.5 lbs baby potatoes
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt (or to taste)
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 tbsp unsalted butter

Instructions

  1. Preheat the oven to 425°F (220°C) and scrub the baby potatoes clean.
  2. Boil the potatoes in salted water for 15-20 minutes until fork-tender. Drain and cool slightly.
  3. Line a baking sheet with parchment paper. Smash each potato to about half an inch thick and arrange on the sheet.
  4. Drizzle the smashed potatoes with olive oil and sprinkle with salt.
  5. Bake for 25-30 minutes until golden brown and crispy.
  6. Meanwhile, melt butter in a saucepan over low heat and stir in fresh herbs until fragrant.
  7. Drizzle herb butter over hot potatoes before serving.
