  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 medium yellow onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tbsp Hungarian sweet paprika
  • 2 bell peppers (1 red, 1 green), sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 3 medium carrots, sliced into rounds
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium-high heat and add oil. Sear beef cubes until browned on all sides. Remove from pot.
  2. In the same pot, sauté onions and garlic until onions are translucent (about 5 minutes).
  3. Stir in paprika, salt, and pepper; cook for an additional minute until fragrant.
  4. Return beef to the pot along with bell peppers, diced tomatoes, carrots, and bay leaves. Mix well.
  5. Pour in beef broth until ingredients are covered. Bring to a boil; reduce heat to low and cover.
  6. Simmer for about 2 hours or until beef is fork-tender.
  7. Remove bay leaves before serving and enjoy with crusty bread or mashed potatoes.
