  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240ml)
  • 1 cup shredded cheese (cheddar or mozzarella) (about 100g)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil diced sweet potatoes in water until tender but not mushy, about 10-15 minutes.
  3. In a skillet over medium heat, cook sausage until browned; break apart as it cooks.
  4. Add onion and garlic to the skillet; sauté until onion is translucent, about 5 minutes.
  5. In a large bowl, combine cooked sweet potatoes, sausage mixture, cream, and half of the cheese; stir gently.
  6. Spoon mixture into a greased baking dish, top with remaining cheese, and bake for 25-30 minutes until bubbly and golden.
