  • 1 lb chicken breast, sliced
  • 2 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 2 tbsp palm sugar
  • 2 cups bean sprouts
  • 4 green onions, chopped
  • 2 tbsp vegetable oil
  • Lime wedges for serving

Instructions

  1. Soak rice noodles in hot water for 10-15 minutes until soft but slightly firm; drain and set aside.
  2. Heat oil in a skillet or wok over medium-high heat. Add sliced chicken and cook until golden brown, about 5-7 minutes. Remove and set aside.
  3. In the same pan, sauté minced garlic until fragrant (about 30 seconds).
  4. Stir in tamarind paste, fish sauce, palm sugar, and a splash of water to create the sauce.
  5. Toss drained noodles and cooked chicken into the pan until well coated.
  6. Fold in bean sprouts and chopped green onions just before serving; serve hot with lime wedges.
