  • 1 lb (450g) Chicken Breast, diced
  • 2 medium Potatoes, peeled and cubed
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 tsp Cumin
  • 1 tsp Coriander
  • ½ tsp Turmeric
  • 1 tsp Garam Masala
  • Salt to taste
  • 1 package (17.3 oz) Puff Pastry (2 sheets)
  • ¼ cup Fresh Cilantro, chopped
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a pie dish with parchment paper.
  2. In a skillet over medium heat, sauté onions until translucent. Add garlic and ginger; cook until fragrant. Stir in chicken and spices; cook until chicken is fully cooked.
  3. Boil potatoes until tender; mash and mix with the chicken mixture and cilantro. Season with salt.
  4. Roll out puff pastry on a floured surface; cut one large circle for the base and another smaller circle for the top.
  5. Pour filling into the pie dish; cover with pastry top or leave open-faced.
  6. Brush edges with egg wash and bake for about 25-30 minutes until golden brown.
