- 1 lb (450g) Chicken Breast, diced
- 2 medium Potatoes, peeled and cubed
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 inch Ginger, minced
- 1 tsp Cumin
- 1 tsp Coriander
- ½ tsp Turmeric
- 1 tsp Garam Masala
- Salt to taste
- 1 package (17.3 oz) Puff Pastry (2 sheets)
- ¼ cup Fresh Cilantro, chopped
- 1 egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a pie dish with parchment paper.
- In a skillet over medium heat, sauté onions until translucent. Add garlic and ginger; cook until fragrant. Stir in chicken and spices; cook until chicken is fully cooked.
- Boil potatoes until tender; mash and mix with the chicken mixture and cilantro. Season with salt.
- Roll out puff pastry on a floured surface; cut one large circle for the base and another smaller circle for the top.
- Pour filling into the pie dish; cover with pastry top or leave open-faced.
- Brush edges with egg wash and bake for about 25-30 minutes until golden brown.
