  • 1 medium head of cauliflower, cut into bite-sized florets (about 4 cups)
  • 3 tablespoons olive oil
  • 2 teaspoons shawarma spice blend (cumin, paprika, turmeric, garlic powder)
  • ½ cup tahini
  • 1 medium tomato, diced
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil and shawarma spices until evenly coated.
  3. Spread the seasoned cauliflower on the prepared baking sheet in a single layer. Roast for 25-30 minutes until golden brown and crispy.
  4. While the cauliflower roasts, prepare fresh vegetables by dicing tomatoes and cucumbers and slicing red onion.
  5. Assemble your bowls by layering roasted cauliflower over fresh vegetables. Drizzle with tahini sauce and squeeze fresh lemon juice on top.
