  • 1 cup firm paneer, cubed

  • 1-inch piece ginger, grated
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 cup coconut milk or heavy cream
  • 1 tbsp lemon juice
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. Blanch the spinach in boiling water for 2 minutes, then transfer to an ice bath to maintain color.
  2. In a pan over medium heat, heat oil and sauté cumin seeds for 30 seconds. Add onion, garlic, and ginger; cook until golden brown (about 5 minutes).
  3. Drain spinach and blend with sautéed mixture until smooth.
  4. Return to pan, stir in turmeric and coriander powder; cook for 7 minutes.
  5. Fold in paneer cubes and coconut milk or cream; simmer for an additional 5 minutes.
