- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon fresh dill (or 1 teaspoon dried dill)
- Salt and pepper to taste
Instructions
- Prepare the vegetables by dicing the carrots and chopping the celery. Mince the garlic.
- In a crockpot, add the chicken breast to the bottom. Layer in the carrots, celery, garlic, salt, pepper, and dill.
- Pour in enough chicken broth to cover all ingredients and squeeze fresh lemon juice on top.
- Cover and cook on low for 6-8 hours or high for 4 hours until chicken is cooked through.
- Remove the chicken from the pot, shred it using two forks, then return it to the soup.
- Stir well and adjust seasoning if necessary before serving hot.
