  • 1 lb boneless, skinless chicken breast
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by dicing the carrots and chopping the celery. Mince the garlic.
  2. In a crockpot, add the chicken breast to the bottom. Layer in the carrots, celery, garlic, salt, pepper, and dill.
  3. Pour in enough chicken broth to cover all ingredients and squeeze fresh lemon juice on top.
  4. Cover and cook on low for 6-8 hours or high for 4 hours until chicken is cooked through.
  5. Remove the chicken from the pot, shred it using two forks, then return it to the soup.
  6. Stir well and adjust seasoning if necessary before serving hot.
