  • 4 large egg whites (room temperature)
  • 1 cup caster sugar (200g)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 teaspoon lemon juice or cream of tartar

Instructions

  1. Preheat your oven to 225°F (110°C). Line two baking sheets with parchment paper.
  2. In a clean mixing bowl, beat the egg whites and salt on medium speed until soft peaks form.
  3. Gradually add the caster sugar one tablespoon at a time while beating on high speed until stiff peaks form and the mixture is glossy.
  4. Gently fold in the vanilla extract and lemon juice (or cream of tartar) using a rubber spatula.
  5. Transfer the meringue mixture into a piping bag fitted with a star nozzle and pipe small rounds onto the prepared baking sheets, leaving space between each.
  6. Bake for 1 to 1.5 hours or until dry and crisp. Turn off the oven and let meringues cool completely inside before serving.
