  • 2 cups butternut squash, peeled and cubed
  • 1 large apple, thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/4 cup olive oil (for roasting and dressing)
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes in olive oil, salt, and pepper; spread on a baking sheet. Roast for 20-25 minutes until golden and tender.
