  • 1 can (15 oz or 425g) low-sodium black beans, drained and rinsed
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes in olive oil, cumin, paprika, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until tender and golden brown, stirring halfway through.
  4. In a large bowl, combine roasted sweet potatoes with black beans, red onion, and cilantro.
  5. In a small bowl, whisk lime juice, olive oil, salt, and pepper; pour over the salad mixture and toss gently.
