Ingredients

  • 1 lb ground pork
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions

  1. Brown ground pork in a large pot until fully cooked. Drain excess fat.
  2. Add diced onion, minced garlic, and bell pepper; cook until veggies soften.
  3. Stir in diced tomatoes, tomato paste, and chicken broth. Add cumin, smoked paprika, and chili powder. Season with salt and pepper.
  4. Add black beans and corn; bring to a gentle boil.
  5. Reduce heat, cover, and simmer for 25–30 minutes.
  6. Serve hot, garnish with fresh cilantro and lime wedges if desired.
