  • 2 lbs boneless skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika (smoked preferred)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper (adjust to taste)
  • Juice of 1 lime

Instructions

  1. Trim excess fat from the chicken breasts and pat them dry.
  2. In a skillet, sauté the diced onion in a bit of oil until translucent. Add minced garlic and cook for an additional minute before removing from heat.
  3. Transfer the sautéed onion and garlic to the slow cooker. Place the chicken on top and add chicken broth, cumin, paprika, salt, pepper, and lime juice.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked and shreds easily.
  5. Remove chicken from the slow cooker, shred with forks, then return it to the cooker to mix with juices.
  6. Serve immediately or let cool before portioning into meal prep containers.
