- 2 lbs boneless skinless chicken breasts
- 1 cup low-sodium chicken broth
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika (smoked preferred)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper (adjust to taste)
- Juice of 1 lime
Instructions
- Trim excess fat from the chicken breasts and pat them dry.
- In a skillet, sauté the diced onion in a bit of oil until translucent. Add minced garlic and cook for an additional minute before removing from heat.
- Transfer the sautéed onion and garlic to the slow cooker. Place the chicken on top and add chicken broth, cumin, paprika, salt, pepper, and lime juice.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked and shreds easily.
- Remove chicken from the slow cooker, shred with forks, then return it to the cooker to mix with juices.
- Serve immediately or let cool before portioning into meal prep containers.
