  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 1 cup jasmine rice (or brown/basmati)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 green onions, chopped (for garnish)
  • 3 tablespoons soy sauce (or gluten-free soy sauce)
  • 2 tablespoons pineapple juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions. Set aside.
  2. Steam the cubed sweet potatoes until fork-tender but firm.
  3. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper; cook until golden brown and cooked through.
  4. Add sliced bell peppers to the skillet during the last few minutes of cooking. Stir in soy sauce and pineapple juice.
  5. Gently add steamed sweet potatoes to the skillet until heated through.
  6. Serve by layering rice at the bottom of bowls topped with the chicken-sweet potato mixture, garnished with green onions.
