  • 4 oz smoked salmon
  • 2 lbs starchy potatoes (like Russets)
  • 1 medium onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups whole milk
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Boil peeled and chopped potatoes in salted water until tender (15-20 minutes). Drain and mash with salt, pepper, and butter.
  3. In a saucepan over medium heat, melt butter. Add flour and whisk for two minutes. Gradually stir in milk, cooking until thickened.
  4. Remove from heat; add onion, parsley, lemon juice, and fish. Pour into the baking dish.
  5. Spread mashed potatoes over the filling evenly.
