  • 2 to 3 pounds pork shoulder
  • 1 medium onion, sliced
  • 28 ounces sauerkraut, drained
  • 2 medium Granny Smith apples, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Pat the pork shoulder dry with paper towels and season generously with salt and pepper.
  2. (Optional) Sear the seasoned pork in a hot skillet until browned on all sides for enhanced flavor.
  3. Place sliced onions at the bottom of the slow cooker. Add half of the sauerkraut followed by the seared pork shoulder.
  4. Top with remaining sauerkraut, sliced apples, minced garlic, caraway seeds, and pour over chicken broth.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until the pork is fork-tender.
  6. Shred the pork using two forks directly in the pot and mix well before serving.
