  • 2 salmon fillets (6 oz each)
  • 2 tablespoons sriracha sauce
  • 1 tablespoon brown sugar
  • 1 cup jasmine rice (uncooked)
  • 1 cup fresh vegetables (cucumbers, carrots, bell peppers)
  • 1 ripe avocado (sliced)
  • 1 tablespoon freshly squeezed lime juice

Instructions

  1. Rinse the jasmine rice under cold water until clear. In a medium saucepan, combine rinsed rice with 2 cups water. Bring to a boil over high heat, reduce to low, cover, and simmer for 15-20 minutes until water is absorbed.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. On the prepared baking sheet, place the salmon fillets and brush them generously with a mixture of sriracha sauce and brown sugar.
