  • 2 cups mixed cremini and shiitake mushrooms, finely chopped
  • 1 sheet puff pastry (thawed)
  • 2 tsp fresh thyme leaves
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • 2 tbsp butter (for sautéing)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter and add chopped mushrooms and minced garlic. Sauté until browned and moisture evaporates. Stir in heavy cream and thyme; cook until thickened. Remove from heat and let cool.
  3. Season chicken breasts with salt and pepper. In another skillet over medium-high heat, sear each breast for about two minutes on each side until lightly browned.
  4. Roll out puff pastry on a floured surface; place half of the mushroom mixture in the center of each sheet. Lay seared chicken on top, cover with remaining mushrooms, then fold pastry edges to seal.
  5. Brush assembled Wellingtons with beaten egg for a golden finish.
  6. Bake for 25-30 minutes until golden brown and puffed up. Allow resting for five minutes before slicing.
