Ingredients
Scale
- 4 boneless skinless chicken breasts
- 2 cups mixed cremini and shiitake mushrooms, finely chopped
- 1 sheet puff pastry (thawed)
- 2 tsp fresh thyme leaves
- 2 cloves garlic, minced
- ½ cup heavy cream
- 1 egg (for egg wash)
- Salt and pepper to taste
- 2 tbsp butter (for sautéing)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, melt butter and add chopped mushrooms and minced garlic. Sauté until browned and moisture evaporates. Stir in heavy cream and thyme; cook until thickened. Remove from heat and let cool.
- Season chicken breasts with salt and pepper. In another skillet over medium-high heat, sear each breast for about two minutes on each side until lightly browned.
- Roll out puff pastry on a floured surface; place half of the mushroom mixture in the center of each sheet. Lay seared chicken on top, cover with remaining mushrooms, then fold pastry edges to seal.
- Brush assembled Wellingtons with beaten egg for a golden finish.
- Bake for 25-30 minutes until golden brown and puffed up. Allow resting for five minutes before slicing.
