  • 2 salmon fillets (6 oz each)
  • 2 tbsp brown sugar
  • 3 tbsp Sriracha sauce
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • 1 cup cooked rice (white or brown)
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together Sriracha, brown sugar, minced garlic, and vegetable oil.
  3. Place salmon on the baking sheet and brush with the Sriracha mixture on both sides.
  4. Bake for 12-15 minutes until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
  5. While the salmon bakes, sauté mixed vegetables in a skillet over medium heat for 5-7 minutes until tender-crisp; season to taste.
  6. Assemble bowls by placing rice at the bottom, topping with sautéed vegetables and salmon. Drizzle with any remaining sauce.
