- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cups chopped romaine lettuce
- 1 cup halved cherry tomatoes
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 oz) black beans, rinsed and drained
- 1–2 fresh jalapeños, sliced (adjust based on heat preference)
- Juice of 2 limes
- 2 tsp ground cumin
- 1/4 cup extra virgin olive oil
- 1 tbsp honey
Instructions
- Preheat grill or grill pan over medium-high heat. Season chicken breasts with salt, pepper, and cumin. Grill for 6-7 minutes on each side until cooked through. Let rest before slicing.
- While chicken grills, wash and chop romaine into bite-sized pieces. Halve cherry tomatoes and slice jalapeños.
- In a large bowl, combine lettuce, tomatoes, corn, black beans, and jalapeños.
- In a small bowl or jar, whisk together olive oil, honey, lime juice, salt, and pepper until combined.
- Slice grilled chicken and add it to the vegetable mixture. Drizzle with dressing and toss gently to coat.
