  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • 12 fresh jalapeños, sliced (adjust based on heat preference)
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 1/4 cup extra virgin olive oil
  • 1 tbsp honey

Instructions

  1. Preheat grill or grill pan over medium-high heat. Season chicken breasts with salt, pepper, and cumin. Grill for 6-7 minutes on each side until cooked through. Let rest before slicing.
  2. While chicken grills, wash and chop romaine into bite-sized pieces. Halve cherry tomatoes and slice jalapeños.
  3. In a large bowl, combine lettuce, tomatoes, corn, black beans, and jalapeños.
  4. In a small bowl or jar, whisk together olive oil, honey, lime juice, salt, and pepper until combined.
  5. Slice grilled chicken and add it to the vegetable mixture. Drizzle with dressing and toss gently to coat.
  6. Serve in bowls or plates garnished with lime wedges if desired.
