  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Thaw frozen shrimp under cold running water if needed; pat dry and season with salt and pepper.
  2. In a large skillet over medium heat, melt butter until foamy. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add shrimp in a single layer; cook for 2-3 minutes on each side until pink and opaque. Remove from skillet.
  4. In the same skillet, add sun-dried tomatoes followed by heavy cream; simmer gently for about 3-4 minutes until slightly thickened.
  5. Stir in spinach and Parmesan cheese until spinach wilts down. Return cooked shrimp to the skillet.
