  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 2 tbsp taco seasoning

Instructions

  1. In a skillet over medium heat, brown the ground beef with the chopped onion until fully cooked; drain excess grease.
  2. Transfer the cooked beef and onion to your slow cooker. Add black beans, pinto beans, corn, diced tomatoes (with juice), and taco seasoning.
  3. Mix all ingredients well in the slow cooker.
  4. Stir in half of the cheddar cheese into the mixture and top with the remaining cheese.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through.
  6. Serve hot with optional toppings like sour cream or green onions.
