- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 red bell pepper, diced
- 2 cups kale or spinach, chopped
- 2 tbsp sesame seeds, toasted
- 3 tbsp tahini
- Juice of 1 lemon
- 1 garlic clove, minced
- 2 tbsp water (adjust for consistency)
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
- While quinoa cooks, chop cherry tomatoes, cucumber, bell pepper, and kale/spinach into bite-sized pieces and place in a mixing bowl.
- In a small bowl, whisk tahini, lemon juice, minced garlic, and water until smooth. Season with salt and pepper.
- Once quinoa has cooled slightly, add it to the vegetable mixture. Pour half the dressing over and toss gently to combine.
- Serve in bowls or plates; drizzle remaining dressing on top and sprinkle with toasted sesame seeds.
