Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 red bell pepper, diced
  • 2 cups kale or spinach, chopped
  • 2 tbsp sesame seeds, toasted
  • 3 tbsp tahini
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 2 tbsp water (adjust for consistency)
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, bell pepper, and kale/spinach into bite-sized pieces and place in a mixing bowl.
  3. In a small bowl, whisk tahini, lemon juice, minced garlic, and water until smooth. Season with salt and pepper.
  4. Once quinoa has cooled slightly, add it to the vegetable mixture. Pour half the dressing over and toss gently to combine.
  5. Serve in bowls or plates; drizzle remaining dressing on top and sprinkle with toasted sesame seeds.
