- 3 lbs beef chuck roast
- 1 packet (1 oz) Au Jus gravy mix
- 1 packet (1 oz) ranch dressing mix
- 6–8 banana or pepperoncini peppers
- 2 tbsp butter
- 1 cup beef broth
Instructions
- Season the chuck roast with salt and pepper. Set your Instant Pot to sauté mode and add 1 tbsp oil. Sear the roast for 4-5 minutes on each side until browned. Remove and set aside.
- In the pot, sprinkle Au Jus gravy mix and ranch dressing mix at the bottom. Place the roast back in and top with sliced peppers and butter.
- Pour in 1 cup of beef broth around the roast without directly pouring on top.
- Close the lid, set to high pressure, and cook for 60 minutes. Allow a natural pressure release for 15 minutes before performing a quick release.
- Shred the meat using forks and return to the pot to soak up juices before serving.
