Ingredients
Scale
- 1 cup sushi rice
- 1 ½ cups water
- 8 oz cream cheese, softened
- ½ cup heavy whipping cream
- ⅓ cup granulated sugar
- 1 cup fresh strawberries, sliced into thin strips
- Optional: chocolate or caramel sauce for drizzling
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 18 minutes or until water is absorbed. Remove from heat and let it cool.
- In a mixing bowl, beat together softened cream cheese and sugar until smooth. Gently fold in the heavy whipping cream until fully combined.
- Lay a sheet of plastic wrap on a bamboo sushi mat and spread an even layer of cooled sushi rice over it, leaving one edge clear.
- Place a line of cream cheese mixture along the center of the rice and top with sliced strawberries.
- Using the bamboo mat, roll tightly away from you while applying gentle pressure to seal the roll. Use a little water on the edge to help it stick.
