  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1/2 cup cream cheese frosting (store-bought or homemade)
  • 8 oz chocolate coating (milk or white chocolate)
  • 12 lollipop sticks

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking pan.
  2. In a mixing bowl, combine red velvet cake mix, eggs, vegetable oil, and water as per package instructions. Pour batter into the pan and bake for 25-30 minutes until a toothpick comes out clean.
  3. Allow the cake to cool completely in the pan before crumbling it into fine crumbs using your hands or a fork.
  4. Mix crumbled cake with cream cheese frosting until well combined and easily formable.
  5. Roll mixture into one-inch balls and place on a parchment-lined baking sheet.
  6. Refrigerate for at least an hour until firm.
  7. Melt chocolate coating according to package instructions. Dip one end of each lollipop stick into melted chocolate before inserting it into each chilled ball.
  8. Fully dip each pop into the melted chocolate, allowing excess to drip off before placing back on parchment paper to harden.
