  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 oz high-quality white chocolate, chopped
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • ¾ cup granulated sugar
  • 1 cup fresh raspberries
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan.
  3. Melt white chocolate in a heatproof bowl over simmering water or in the microwave; let cool slightly.
  4. Beat cream cheese and sugar until creamy. Add sour cream and mix well. Incorporate eggs one at a time, then fold in melted white chocolate.
  5. Mash raspberries in a separate bowl to create a puree.
  6. Pour half of the cream cheese mixture over the crust, add raspberry puree, swirl gently, then top with remaining cream cheese mixture and more raspberry drops.
  7. Bake for 60-70 minutes until slightly jiggly in the center. Let cool gradually in the oven for an hour.
