- 16 oz cream cheese, softened
- ½ cup sour cream
- ¾ cup granulated sugar
- 1 cup fresh raspberries
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan.
- Melt white chocolate in a heatproof bowl over simmering water or in the microwave; let cool slightly.
- Beat cream cheese and sugar until creamy. Add sour cream and mix well. Incorporate eggs one at a time, then fold in melted white chocolate.
- Mash raspberries in a separate bowl to create a puree.
- Pour half of the cream cheese mixture over the crust, add raspberry puree, swirl gently, then top with remaining cream cheese mixture and more raspberry drops.
- Bake for 60-70 minutes until slightly jiggly in the center. Let cool gradually in the oven for an hour.
