Ingredients

  • 0.5 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, and oil until smooth; combine with dry ingredients.
  4. Fill cupcake liners two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
  5. While cooling, beat cream cheese and butter together; gradually add powdered sugar to achieve desired sweetness.
  6. Frost cooled cupcakes generously with cream cheese frosting.
