  • ¾ cup brown sugar, packed

  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup crushed candy canes (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla and peppermint extracts.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, and salt; gradually combine with the wet ingredients.
  5. Fold in half of the crushed candy canes into the dough.
  6. Scoop tablespoon-sized balls onto prepared sheets, spacing them about two inches apart. Bake for 10-12 minutes until edges are set but centers remain soft.
  7. Top warm cookies with remaining crushed candy canes before transferring to wire racks to cool completely.
