Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 24 oz (3 packages) Philadelphia cream cheese, softened
  • 2 large fresh lemons (zest and juice)
  • 3 large eggs, room temperature
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared pan and bake for about 10 minutes.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, lemon zest, and juice; mix well. Beat in eggs one at a time.
  4. Pour half of the filling over the crust. Drizzle half of the lemon mixture on top and swirl with a knife. Repeat with remaining filling and drizzle.
  5. Bake for 30-35 minutes until edges are set but center is slightly jiggly. Let cool at room temperature before refrigerating for at least two hours.
  6. Lift out using parchment overhang, cut into squares, and serve chilled or at room temperature.
