- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 24 oz (3 packages) Philadelphia cream cheese, softened
- 2 large fresh lemons (zest and juice)
- 3 large eggs, room temperature
- ½ cup sour cream
Instructions
- Preheat your oven to 325°F (160°C). Line a baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the prepared pan and bake for about 10 minutes.
- In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, lemon zest, and juice; mix well. Beat in eggs one at a time.
- Pour half of the filling over the crust. Drizzle half of the lemon mixture on top and swirl with a knife. Repeat with remaining filling and drizzle.
- Bake for 30-35 minutes until edges are set but center is slightly jiggly. Let cool at room temperature before refrigerating for at least two hours.
- Lift out using parchment overhang, cut into squares, and serve chilled or at room temperature.
