  • 3 lbs chuck roast
  • 2 medium yellow onions, chopped
  • 4 large carrots, cut into chunks
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  3. Deglaze the pot by adding red wine and scraping up browned bits; simmer for 2-3 minutes.
  4. Return the roast to the pot with beef broth, thyme, and rosemary. Bring to a gentle boil, then cover tightly.
  5. Transfer to the oven and slow cook for 3-4 hours until tender (meat should shred easily).
  6. Let rest for 10 minutes before slicing or shredding. Serve alongside vegetables.
