  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tbsp gel red food coloring
  • 2 large eggs
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, mix sugar, vegetable oil, buttermilk, eggs, food coloring, and vanilla until smooth. Gradually combine dry ingredients with wet until just mixed.
  3. For the cheesecake filling, beat cream cheese with powdered sugar until smooth; add an egg and vanilla extract.
  4. Fill each cupcake liner halfway with red velvet batter. Add one tablespoon of cheesecake filling on top and cover with more red velvet batter.
  5. Bake for 20-22 minutes or until a toothpick comes out clean. Allow cooling before frosting.
