  • 8 oz dark chocolate (70% cocoa or higher)
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 4 large eggs (separated)
  • 1 cup heavy cream
  • 1 tsp pure vanilla extract
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water or microwave until smooth. Let cool slightly.
  3. In a bowl, beat egg yolks with sugar until pale and fluffy. Gradually stir in the melted chocolate mixture.
  4. In a separate bowl, whip heavy cream until soft peaks form. Gently fold half into the chocolate mixture, then fold in the remaining cream.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours or overnight.
